Espagueti Rojo (Mexican Style Spaghetti)

This recipe for Mexican Spaghetti (as I like to call it) is a recurring one in our home. It was one of my favorites my mom used to make growing up! This recipe is amazing for those who have issues with their stomachs and can’t eat regular spaghetti sauce (like me). Since you’re mixing tomato sauce with media crema (table cream) it helps balance out the tomato/ sauce flavor. You can pair this spaghetti with just about anything. I typically do shrimp (like you’ll see in these pictures), ground turkey or ground beef. Truthfully, once you know how to make this recipe it gets easier every time. I don’t need to read the recipe anymore and I feel really confident about it! I promise once you have this creamy and delicious dish you will never have spaghetti any other way (ask Jake)! Here’s what you’ll need:

Olive Oil ( Vegetable works just as great)

1/2 Box of Spaghetti Noodles (I use the Barilla brand)

1 Stick of Butter

1 Can of Nestle Media Crema (7.6 oz)

1 Can of Tomato Sauce (8 oz)

Ground Pepper & Garlic Salt (not pictured)

Here’s what you’ll do:

Step 1: Boil water (I eye up the water depending on how much noodles I’m wanting to make).

Step 2: Once water is boiled, add in 1 tbsp. of olive oil, a little salt and spaghetti noodles (I make 1/2 a box). Set timer for 20 minutes and be sure to let them cook that long (trust me).

Step 3: Once the noodles are ready in a colander drain the water and rinse them with cold water so they don’t stick and set aside.

Step 4: In a pot (I use the same one I cook the noodles in) put 1 stick of butter to melt.

Step 5: Once the butter is melted, add in 1 can of media crema (table cream) and 1 can of tomato sauce stir the ingredients. Just enough to when you see it orange (as pictured).

Step 6: Put the noodles back into the pot and mix all of it together. Add ground black pepper and garlic salt desired to taste.

Step 7: Serve and Enjoy!

Jacquie’s Notes:

  • If you’d like to cook a whole box of spaghetti I recommend doubling the table cream and tomato sauce to make it creamier but everything else can stay the same( unless you’d like to double everything up).
  • You can use any tomato sauce but this one is my favorite. However, somedays I just make do with what I have.
  • I love having the Garlic Knots from Aldi with this.
  • When I serve this meal I like to sprinkle parmesan cheese on top.
