Quick & Easy Chicken Fajitas Served on Lettuce Leaves

This summer my schedule is booked left and right so, I have been trying to plan meals that require minimal instructions. Something quick and easy but also something nutritious! This fajita recipe is exactly that! You can make this for your family to have with tortillas. However, if you’re like me and are trying to stay within a diet I saw a tip in a meal plan book that you can replace tortillas with lettuce leaves (I use romaine lettuce and it’s SO refreshing).

P.S. I’ve made this so many times I just guess about how much of each ingredient I use.**

What You Need:

  • Cooking oil ( I use avocado oil)
  • 1 lb. Chicken Breast
  • 2 Bell Peppers (any kind is fine, I use green, yellow and sometimes orange)
  • 1/2 purple onion
  • 1 cup of cheese dip (this Gordo’s cheese dip is yummy)
  • 1 pack of fajita’s seasoning (I love using this Lawry’s one)
  • Romaine Lettuce or Tortillas (quantity depends on how many you’d like)

What You Do:

  1. Cut the chicken breast into strips and cook with avocado oil on medium-high heat.
  2. While chicken cooks, cut the bell peppers and onions into strips.
  3. When the chicken is fully cooked add in the bell peppers and onions.
  4. Once the peppers and onions have softened sprinkle in the fajita seasoning and cook until it’s all mixed together (I typically use a whole packet but, you can use as much or as little as you’d like). It will start to look saucy.
  5. While waiting for the fajitas to cook, heat the cheese dip according to the instructions on the cheese dip container (I did a minute in the microwave, stirred it, then heated it again until I got the consistency I wanted).
  6. Serve warm over tortillas or in my case romaine lettuce leaves, drizzle warm cheese dip on top and ENJOY!

Jacquie’s Tips:

  • Use as many veggie’s as you’d like! I keep it simple because I make this on Jake and I’s busier nights.
  • Look for precut veggie mixtures, that will help minimize your prep work if you’d like to make it even quicker!
  • If you have the time, grilling this meal tastes SO much better. I cook it on the stove for a quicker cook time otherwise I’d have Jake grill if time allowed it.
  • When sprinkling fajita seasoning, if your chicken starts to look dry add in a little bit of water to keep it saucy.
