Ceviche de Jaiba (Crab Ceviche)

Hello my loves!!! I have been on a roll with recipes lately. So here’s another one! When it’s hot out I’d prefer not to cook out of an oven or stove, that is why ceviche is the perfect dish for summer. Ceviche is typically a dish made out of raw seafood and it cooks by being marinated in lime juice. It’s almost like a seafood salad but more refreshing! Shrimp ceviche is my ALL time favorite, however I don’t like to wait for it to marinate/cook. So when I make ceviche at home it’s with imitation crab since it is pre-cooked. Keep reading to find out how I make this refreshing dish!

***If I had to guess I’d say it makes about 4-6 servings***

Here’s What You’ll Need:

  • 1 lb. of Imitation Crab
  • 1 Cucumber
  • 2 roma tomatoes
  • 1/2 of a purple onion
  • 2 jalapenos (optional)
  • 1 bunch of cilantro
  • 6 limes for lime juice
  • 1/4 cup of Ketchup
  • Salt, to taste
  • Pepper, to taste
  • 1 cup of Clamato
  • Tortilla Chips (I like these )

Here’s What You Do:

  1. Chop or flake the imitation crab and put in a large mixing bowl
  2. Chop up cucumber, tomato’s, jalapenos and cilantro. Add that to the same mixing bowl you put the crab in.
  3. Squeeze the juice out of the limes and add to the mixture.
  4. Add the ketchup and the hot sauce (I recommend you drizzle hot sauce all over since the ketchup does cut some of the heat. However, you can add as much spice as you prefer).
  5. Add salt and pepper to taste.
  6. Pour in the cup of clamato.
  7. Mix and enjoy with tortilla chips!
